I don’t usually share recipes, but today’s lunch deserves a quick write up.
1 Tablespoon of Diced Onion
2 Tablespoon of Chopped Green Peppers
1 Tablespoon of Diced Tomato
3 Strips Turkey Bacon
1 Spinach Tortilla Wrap
Fry bacon on a skillet. Cook until darkened on both sides (about 4-5 minutes). Flip as necessary so it doesn’t burn. Once it’s darkened, turn off the heat and let them cool.
Cut up all veggies and put into a pan on low heat. Sprinkle with about two teaspoons of salt (eyeballed this). Mix everything up and leave on low heat.
Take three strips of bacon and lay them on top of each other. Cut them into small pieces horizontally and vertically (each bit should be about 1/4 inch square).
Take cut up back and add it to the veggies. Stir it all up and allow to cook a bit more (about 30 seconds).
Crack eggs on top of mix and scramble all of the ingredients together. Cook until eggs are firm and the scramble stays together. If you can track it down, just as the scramble starts to set up, sprinkle about two teaspoons of Miracle Blend on top: http://www.aldenmillhouse.com/product.htm.
Remove eggs from heat and place onto tortilla. Roll it up like a burrito and JAM delicious lunch (or breakfast, I suppose).
